This guy's quite the character. He learned the word
"moustache" because his Nono taught it to him.
It's funny that both of Alexander and William's
grandfathers have moustaches...I wonder if they'll
associate moustaches with older men? :) |

Happy 7 month birthday, William!
Statistics:
Weight: 21 lbs 11 oz
Abilities: William had 4 teeth come in this month!! He got them
two at a time on the bottom part of his mouth. He was definitely not
a happy camper when he was teething. William was much more aware
and started to develop stranger anxiety and recognize familiar faces.
He also began saying the "Mmmmmm" sound a lot. He still loves
laughing and playing with his big brother. One of his favorite past times
is chasing Alexander and Oscar around the house in his walker. |

I feel like I don't feature Oscar enough on this blog. Here's our
first born, who is 7 1/2 years young and just as feisty as ever. |

I am not a fan of country music. I even remarked to my grandfather that I found a recipe that was developed by Trisha Yearwood (a country singer) and that he should be proud of me for even knowing who she is. Lol! He was impressed.
This recipe is an incredibly delicious, delectable, lip-smacking, and healthy salad that you will make over and over and over again. I definitely modified the recipe to make it a little bit healthier, so please make sure that you note the changes.

Chop up 1/2 a head of red cabbage and 1/2 head of napa cabbage
and place it in a large mixing bowl.
*If you can't find napa cabbage, you can substitute it for 1 bunch
of kale. It also works really well. |

| Throw in 3 green onions that have been sliced. |
 |
| Add in ~1 cup of chopped carrots, and ~1 cup of sliced cucumber. |
 |
Add in 8 oz shelled edamame (or you could even do 8 oz of
sliced sugar snap peas - I personally preferred the snap peas because
they added another nice crunch to the salad). |
 |
Dust off your blender and add in the following ingredients:
- 1 bunch cilantro, stems and leaves
- 1/3 cup extra virgin olive oil
- 1/3 cup apple cider vinegar
- 1/3 cup honey (in this case, I had leftover fig preserves and they added a nice sweetness)
- 2 cloves garlic
- Juice of 2 limes
- Salt and pepper
Put the top on the blender and liquify it, baby!
*Do NOT add as much sugar or extra virgin olive oil as the recipe calls for
or else it will be too liquidy and ridiculously sweet. |

| The end result is an incredibly delicious vinaigrette. |

Pour the salad dressing over the salad, mix it up and serve!
It's crunchy, sweet, slightly acidic and 110% delicious!

Alexander asked for more! :) |
Before Joseph started back to the wards, we wanted to do as many fun little family trips as we could. One of Joseph's favorite places to go to was Davis' Farmland because you were able to feed and interact with all of the animals at the farm. Joseph had just as much fun as Alexander! Here's a recount of our outing:

that there were a bunch of sheep and goats underneath it. |

| Again...he loved chasing the chickens. |

Except this rooster. Once Alexander saw the rooster, he turned
and ran away. Hilarious! |

One of our last family outings to dinner before Joseph started his first job as a doctor. We went to Fogo de Chao with William and Alexander. Alexander ate an adult-sized portion of meat....he just kept asking for more! William chewed on the red and green discs the whole time.

We had a great last month together before Joseph had to start his busy schedule of being a resident. Lots of fun times and great memories were made. I can't wait to see what this year has in store for us. Until next time...
