4 year old and 18 month check up for both of the boys. Thankfully they allowed me to book their appointments back to back.

Both of their check ups went very well and they're both in great health! We couldn't ask for anything more. Our doctor's office is so awesome that after each check up, she gives each of the boys a book. William got a nice board book and Alex got a book that received a Caldecott Honor. Pretty cool and very generous. :)

Alex's 4 year old statistics:
Height: 96% percentile (43 lbs)
Weight: 92% percentile (43.25 inches)
BMI (body mass index): 69% percentile
*He passed his vision and hearing test with flying colors.
SUPER funny story: When the nurse was giving Alex his hearing test,
she said, "Ok, tell me when you hear the beeps." Then, she proceeded to play a series of beeps that he listened to intently and silently, without responding.
Nurse - "Alex, did you hear any beeps?"
Alex - "Yes! I heard lots of them!"
Nurse - "Ok honey, well, you have to TELL me each time you hear a beep, ok?"
Alex - "Ok."
Nurse - "Alex, did you hear beeps this time?"
Alex - "Yep! I heard ALL of them!"
Mommy interjects - "Ok Alex, let's practice. Every time I say, "beep," you have to say, "Beep!""
Alex - "Ok."
Finally, he got it....but it was seriously hilarious because he was sitting there,
and I could tell that he could hear the beeps. He just didn't understand what to do. Too cute! |

Height: 96% percentile (34.5 inches)
Weight: 96% percentile (29.6 lbs)
Head Circumference: Still off the charts (over 100%), but it's starting to plateau, so it's all good. |
Since Joseph got back early one night, we decided to take the boys out to dinner and then to ice cream afterwards. It was such a nice day that we enjoyed our froyo (frozen yogurt) outside.

gummy bears, and rainbow sprinkles.

Chocolate pudding surprise time! I was perusing my Pinterest board and found that I had pinned a surprising recipe for chocolate pudding. The base of the pudding is actually ripe avocados! How cool is that? I had all of the ingredients, and 10 minutes to spare, so I figured I'd give it a go.
Ingredients:
- 2 large avocados, pitted and peeled
- 1/2 cup unsweetened cocoa powder
- 1/2 cup brown sugar
- 1/3 cup milk (of your choice, you could use almond, rice, or even coconut)
- 2 tsp vanilla extract
- 1 pinch ground cinnamon

Place all of the ingredients into a food processor and blend until
completely smooth.
Refrigerate for at least 30 minutes before serving. |

I had to make the chocolate pudding look a little more appealing,
so I added some rainbow sprinkles to it for the kids.
Look how beautiful it is! It's very rich and very chocolatey. There's
definitely a certain "Je ne sais quoi" once you take the first bite in
regards to the background flavor and texture. But otherwise, it's actually
quite delicious. A small serving is just enough to satiate that chocolate craving
you might be having. (And you don't have to feel guilty about it!) |

Ooohhhh fiddleheads! (Instead of "fiddlesticks"....get it?) These beauties are actually young ferns that have been harvested before they can grow any further. They have a really short season, so when I saw these at the grocery store, I was so excited to bring these home and attempt to prepare them. (We had had these at one of our favorite restaurants a few years back, and were blown away at how awesome they were.)
My sister was over that night, and she helped me look up a recipe on how to prepare these at home. As she was reading recipes, she also read that one should be careful when he/she is preparing the fiddleheads, because poorly prepared fiddleheads can lead to food-borne illnesses. I.was.terrified. We found a very simple recipe, but I was overly cautious, as I didn't want to poison my family with poorly prepared fiddleheads.
So, disclaimer: TREAD LIGHTLY AND BE CAUTIOUS when preparing fiddleheads.
Ingredients:
- 3 cups fiddleheads
- 3 tbsp extra virgin olive oil
- Salt, pepper, garlic powder
- 1 tbsp fresh lemon juice
- Water

| Trim the ends of the fiddleheads and place them in boiling water for 15 minutes. |

After boiling them, toss them in a saute pan over medium/high heat with the extra virgin olive oil, salt, pepper, garlic powder, and lemon juice and cook for another 4-5 minutes. |

Tasty! They're a nice change to your typical side dish and are an interesting novelty. They have the texture of a nicely cooked green bean with a similar flavor.
*To be quite honest, I was so terrified of getting my family sick, that I boiled the fiddleheads for 17 minutes, and that was definitely too long. They were a little on the soggy side, but the sauteeing definitely helped afterwards. The kids absolutely loved them, though. William kept asking for, "Moh!" (more) |

I've definitely been trying to take it easy and stay off of my feet, since I was "lectured" by the tech that helped fit me into my boot. It kept shifting and was giving me a bruise on my leg, so I asked her to look at it. She told me that I was "too active" and had to slow down, as I'm technically not supposed to be bearing any weight on my right foot anyways. I pointed to the boys and asked her, "How am I supposed to
not be active when I'm chasing these two guys around?" She said, "Well, you're going to have to try your best." So that's what I'm trying to do....I'm trying to slow down as much as possible and stay off of my foot so it can get better sooner.
Let's hope this works so I can get back to my normal activity with the kiddos.
