Proud Mommy Moment!
Alex got all of his ninja turtle toys out,
and instead of having them battle Shredder (the bad guy),
he had them all share a chicken dinner. Lol!
He pretended to feed all of them and used
perfect manners, as well!

My faithful companions at the physiatrist's office. They're snacking
on clementines in this picture. The physiatrist and her residents all
LOVE the boys...so they actually don't mind going to the office
because they get lots of positive attention.
She asked me to get an MRI of my foot to see if there was truly a
stress fracture. We'll see how it goes. |

The boys sat on the couch to get comfortable, and Oscar decided to

Alex - "Ummm...no?" Yup...the little
bit of chalk on his upper lip and on his
shirt are pretty telltale signs...plus, I saw him do it.

We took the boys out to P.F. Chang's for
lunch last weekend, and Alex was GREAT
with using the practice chopsticks.

While William was taking a nap one afternoon, Alex was playing
with some Lego kits that he had gotten for his birthday from his friends.
I was SO proud of him! I simply pointed to the picture, step-by-step,
and he figured out how to do it. He built these all on his own! |

I was craving some bbq, so Joseph
grilled some beautiful steaks, portobello-
mushrooms, asparagus, and corn for dinner
that evening.
While we were grilling, he got some good
snuggle time in with Alex while William was
still napping. :) |

And now for an amazing summer salad!! A woman that I know from elementary school posted this recipe on Facebook. Once I saw the picture, I looked at it and even commented that it looked amazing. I thankfully had all of the ingredients at home and couldn't wait to make this salad right away! Here's an amazing recipe for corn, tomato, and avocado salad with a honey lime dressing:
Ingredients:
- 1 pint grape tomatoes, quartered
- 1 ripe avocado, diced
- 2 ears of fresh sweet corn (or 1 bag of frozen that is thawed and cooked according to instructions)
- 2 tbsp fresh cilantro, chopped
- 4-5 large leaves of fresh basil, chopped
- Honey Lime Dressing
- Juice of 1 lime
- 3 tbsp vegetable oil
- 1 tbsp honey
- Sea salt and fresh cracked pepper, to taste
- 1 clove garlic, minced (or grated)

We have fresh cilantro in our little garden, so I asked Alex to help
me pick some cilantro and basil for the salad that evening.
We washed the cilantro and basil. Then, Alex was my incredible sous chef
and picked all of the cilantro leaves off of the stems! He did an amazing
job while I was chopping up the vegetables for the salad. I was so proud of him :) |

When a recipe calls for the juice of a lime, I like to add the zest
of the lime as well (I feel like it adds a lot more flavor).
In a separate bowl, whisk together the following ingredients:
Juice and zest of 1 lime
1 tbsp honey
1 clove minced (I grated mine) garlic
Salt and pepper
*Stream 3 tbsp of extra virgin olive oil into the mixture as you're whisking |

The delectable dressing - golden and beautiful. This is a lovely and
light dressing that would really go well on any salad. |

In a mixing bowl, mix together the following ingredients:
Chopped basil and cilantro
Tomatoes
Avocado
Corn
Then, pour the dressing over it and lightly stir it together to coat all of
the ingredients.
*I made this salad two days later (because I'm addicted to it) and I added
3 small cucumbers (quartered) and 3 green onions (sliced) to this salad.
The cucumbers gave it a nice crunch, and the green onions added
a nice flavor that I think rounded out the entire salad.
I served this with grilled fish, but this would go well with any protein (or
even served on a chip like a salsa). |

Isn't it a feast for the eyes? The colors are vibrant and beautiful
and the taste is out of this world. So fresh and delicious with zero guilt!
I'm having problems with editing this post, so my closing will be here. It's been a low-key week because my foot was hurting me and I couldn't be on it very much. Thus, there are not many pictures this week. No worries, though. There'll be many more for next week.
