Eggs in a Pepper, My Gym, and Shrimp and Chicken Teriyaki - The Weekend Edition

On the plate:  Eggs in a pepper (just as it sounds) and Shrimp and Chicken Teriyaki

Soundtrack to cook to:  Since I only cooked breakfast this weekend, it was the theme song to Thomas and His Friends...Alexander is a HUGE Thomas the Tank Engine fan.

Ahhhh, the weekend!  It was such a lovely weekend because Joseph had both days off!!  It was so nice for him (and for us) since the past few weeks have been pretty rough.  Joseph has been in his surgical rotation and has been waking up at 4:30 a.m. every morning and getting home around 7-8 p.m. each night for six days a week.  As much as he is enjoying this rotation, he definitely enjoyed the extra sleep this past weekend (and we enjoyed having him home!).
Since Joseph was sleeping in, I decided to cook up a healthy and simple breakfast.  I saw this cute idea for eggs in a pepper (instead of eggs in a basket or "shotgun eggs" where you cut a hole in a piece of bread and cook an egg in the hole of the bread on a skillet).  It was delicious and simple, served alongside a great cup of coffee and two pieces of flax quinoa bread.
We each had one with a full egg and one with an egg white.
After breakfast, we went to the Franklin Park Zoo to walk around and see the animals.  Joseph hadn't seen a few of the exhibits the first time we went there, so it was a nice treat for him as well.  The prairie dogs were definitely a highlight of the trip.  They were perfectly perched on their mound and happily munching on their hay.  It was funny watching their chubby little lips go to town.
Since Joseph got a good night's rest and he actually had some energy, he decided that he would give me a rest and insisted on making a delicious dinner.  He made his specialty of chicken, shrimp and vegetable teriyaki.  He basically stir fries all of the veggies and meat and then coats them in this delicious teriyaki sauce that his mom perfected.

Alexander and I decided to play around on the first
floor, while Joseph cooked.  Alexander decided to find
another use for his art easel.

Since Alexander missed his gym class this past Wednesday because he had his 18 month check-up, we were able to make up his class this Sunday.  Joseph got to come along and see the little man in action.

After Alexander's full day at the gym (ha!), he enjoyed a nap and a nice visit from Tita Kristen and Uncle Pete.  We're so lucky to have family close by!  They've afforded us many date nights and breaks.  We're very thankful.  So thankful that they watched Alexander while Joseph and I went to the gym. :)  Alexander had a great time at the park with Tita Kristen and Uncle Pete (also known as "Eppy").  They snapped this great pic of our little monk monk that I just had to include:

After a very full day, Alexander and I enjoyed some Thomas the Tank Engine while Joseph studied.  Alexander isn't a big snuggler (or maybe I'm a huge snuggler and he just doesn't snuggle as much as I would like), but whenever we watch a show together, he loves to snuggle.  This picture warms my heart:
