Low Key Day and Soft Shell Tacos

On the plate:  Soft Shell Tacos

Soundtrack to cook to:  Holiday music on the Pandora station...I've been bitten by the holiday bug!  However, in my defense, the oldies station did start playing non-stop holiday music already.  I feel like it gets earlier every year!

Argh!  I forgot my phone this morning and was unable to take pictures of Alexander in his music class, at the park, and playing with our new neighbors.  Some people would panic because they wouldn't be able to get ahold of anyone or vice versa.  Me?  I panicked because I couldn't take pictures or videos and send them to my family....I suppose I need to get my priorities straightened out. :-P
After a nice nap, we played around the house and I was able to take a few snapshots:

After playing around and going for a walk, it was time to start on dinner.  We had a nice little surprise today, though!  Joseph started a new rotation and is now in anesthesiology.  It was his first day today, and needless to say, I think we're both enjoying the hours much more than his previous one.  He got home at 5 p.m.!!  What a treat!  Now on to dinner...
Prep an assortment of vegetables... 
and cook them up in a pan with ground turkey, cilantro, black beans
and seasonings.
Joseph and I enjoyed our whole wheat soft shell tacos
with spinach, avocado, cheese, and sour cream garnish.
Alexander enjoyed an "open-faced" version of the taco.
You can tell by looking at his dirty little face, that he enjoyed dinner. :)
So much that he felt like dancing!
And flashing a cheesy smile.  Love it!
He enjoyed drinking some orange juice out of a cup after dinner.
He's been very interested in trying to drink out of a cup lately.
After dinner, it's upstairs for some book reading
and his bath.  This little stud muffin has had a full day!
Another great day!  Daddy got home early and Alexander got to play with some new friends.  Until next time...
