Soundtrack to cook to: The Beatles' A Hard Day's Night
Bistro night!! It's a little something that I made up for the fact that it's leftovers with a little fancy sandwich thrown in. I typically do this when I have a leftover soup from the previous day that isn't hearty like a stew and needs a little something extra to fill our tummies.
For the sandwich, I took a steak, drizzled it with truffle oil (be very wary, a little goes a LONG way), and sprinkled Montreal Steak Seasoning on both sides. I swear, you could put that seasoning on an old shoe and it would be delicious. I threw the steak under the broiler and began scouring the fridge to see what vegetables were about to go (that's usually how I cook an impromptu meal if I haven't been inspired by a recipe, or haven't had the time to plan ahead). I grabbed some red pepper, enoki mushrooms, and onions and sautéed them. Earlier in the day, I went to Whole Foods and grabbed some low calorie swiss cheese, alfalfa sprouts, and kalamata olive and caramelized onion bread. With all of these ingredients, I concocted this delicious layered sandwich:

*Sigh* Thank goodness I have this year to be with him and catch every moment. It still seems like he was a little peanut just the other day...
