Soundtrack to cook to: Michael Jackson's Number Ones
Rain + dark clouds + cold weather= Perfect chili weather! The perfect solution to a cold and rainy autumn day is a nice, hot bowl of spicy, delicious chili, and not just any chili - my mom's chili. It's a Chicago-style chili that is so thick that if you put your spoon in it, it'll stick straight up. I choose to add double the veggies than the recipe calls (because I like my veggies). It's delightfully smoky and wonderful and reminds me of my childhood. Take a look at this beauty:
| Top this with some grated cheese to get a nice gooey and cheesy bite. Mmmm...so good! Alexander even liked the chili!! I was so surprised because it's pretty spicy. That's my kid for ya! :) |
It hasn't been a very eventful day, since the weather's kept us indoors, but we did have a fun little outing. We went to Alexander's My Gym where they had Halloween themed activities. Alexander personally loves climbing the structures and going down the slides. Here's the little guy in action:
This tuckered the little guy out. It's great for him to get some physical activity and be able to socialize with a bunch of other kids. He seems to enjoy it a lot. Until next time...
Love and kisses,
Nikki
