Naked baby, Roasted Eggplant Soup, and Lumpia

On the plate:  Roasted eggplant soup courtesy of Smitten Kitchen (my favorite food blog) AND Mama Domy's lumpia.

Rain, rain, go away...the weather's been pretty nasty the past few days.  I've been trying to take the boys (Oscar and Alexander) outside every chance that I could get...which haven't been many.  Thus, we've been having fun playing with homemade play dough, reading books, playing with toys, and watching movies.  Alexander thoroughly enjoyed watching Snow White and the Seven Dwarves.  He got up off of the couch and danced and laughed when Snow White was dancing with the dwarves in their home.

Every night after dinner, Alexander usually goes to the bathroom.  Afterwards, we allow him to have some "naked time" (he runs around in just a diaper...not completely naked) before he gets his bath.  Here's the result of his naked time from the other night:

I've tried to get out of my cooking rut and have been on a constant lookout for new recipes and inspirations.  I came across a roasted eggplant soup recipe and was incredibly inspired by its simplicity and its ingredients (lots of veggies!!).  Here's how it panned out:
Roast the veggies

Put the veggies in a pot with spices

Cook in the pot and use an immersion blender to blend
it until it's smooth.  Top with feta and enjoy!!

Report:  I followed the suggestions of the chef that came up with the eggplant soup recipe.  She suggested to add ground corriander, cumin, a little bit of lime (I used lemon), and some feta on top of the original recipe.  It was delicious and full of yummy vegetables.  This is family cookbook worthy!
