Cracking Up and Pumpkin Muffies

Laundry day and taking care of business, that's what today's been all about.  Since I've been busy folding laundry, I took a note from Joseph's "killing time with Alexander" book and played some youtube videos of dachshunds playing for Alex to watch.  This is the result of that time:




A woman once said, "His laughter is like sunshine!"  I snickered at the comment at first, but then reflected and thought...yeah!  It really is like sunshine!  You just can't help but smile on the outside and the inside when you hear it. :)

After all of that, Alexander took a nice nap (and so did I).  Once he woke up, I thought it would be nice to go and play at the local park.  




After a perfect fall day, I thought I'd make a little treat with pumpkin in it.  I loooooove pumpkin!  Pumpkin scented candles, pumpkin flavored treats, and even pumpkin ale (delish!!), especially during the fall.  I googled a low calorie pumpkin bread recipe and made pumpkin muffies.

Report:  They turned out great!  I don't like baked goods that are too sweet.  There's just a small amount of chocolate chips in the recipe that give the muffies the right amount of sweetness with a lovely, spicy, pumpkin background.  If you don't put the chocolate chips in, the muffies will be bland.

Autumn is my favorite season.  I love the crisp air, the smell of fires burning, and the vibrant color of the leaves in the trees.  I know I've said it before, but New England is so beautiful in the fall.  Until next time...
